
Homemade Tiramisu Recipe: A Classic Italian Delight
Tiramisu, a beloved Italian dessert, translates to “pick me up,” and one bite of this creamy, coffee – laced treat is sure to do just that. With its layers of delicate ladyfingers soaked in rich coffee, a velvety mascarpone cheese filling, and a dusting of cocoa powder, it’s a symphony of flavors and textures. Here’s how you can create this decadent dessert in your own kitchen.
Ingredients
For the Ladyfinger Soak
- 1 cup (240 ml) strong brewed coffee, cooled
- 2 tablespoons (30 ml) rum or marsala wine (you can also use a non – alcoholic coffee liqueur)
For the Mascarpone Filling
- 16 ounces (454 grams) mascarpone cheese, at room temperature
- 1/2 cup (100 grams) granulated sugar
- 2 large eggs, separated
- 1/4 teaspoon vanilla extract
- A pinch of salt
Assembly
- 1 package (about 200 grams) ladyfingers
- Unsweetened cocoa powder, for dusting
- Shaved dark chocolate, for garnish (optional)
Instructions
Prepare the Ladyfinger Soak
In a shallow dish, combine the cooled coffee and rum or marsala wine. Stir well to mix the flavors. Set aside.
Make the Mascarpone Filling
- In a large bowl, beat the mascarpone cheese and granulated sugar with an electric mixer on medium speed until smooth and creamy, about 2 – 3 minutes. Scrape down the sides of the bowl as needed.
- In a separate clean bowl, beat the egg yolks with the vanilla extract and a pinch of salt until pale and thickened, which usually takes around 3 – 4 minutes.
- Gently fold the beaten egg yolks into the mascarpone – sugar mixture until well combined.
- In another clean, dry bowl, beat the egg whites until stiff peaks form. Be careful not to over – beat them.
- Gradually fold the beaten egg whites into the mascarpone – yolk mixture in three additions. Use a rubber spatula to gently combine the ingredients, taking care not to deflate the egg whites. The filling should be light and fluffy.
Assemble the Tiramisu
- Take a 9×13 – inch baking dish or an 8 – inch square dish. Dip each ladyfinger quickly into the coffee – wine mixture, making sure to coat both sides but not let them soak for too long, or they’ll become too mushy. Arrange a single layer of soaked ladyfingers in the bottom of the dish, covering the surface completely.
- Spread about half of the mascarpone filling evenly over the layer of ladyfingers.
- Repeat the process: dip another layer of ladyfingers in the coffee – wine mixture and arrange them over the mascarpone filling. Then spread the remaining mascarpone filling on top.
- Use a sieve to dust a generous layer of unsweetened cocoa powder over the top of the tiramisu. If desired, sprinkle some shaved dark chocolate for an extra touch of luxury.
Chill and Serve
Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. This allows the flavors to meld and the ladyfingers to soften properly. When ready to serve, cut the tiramisu into squares and enjoy the rich, creamy goodness.
